Perfect Pumpkin Scones with Easy Maple Glaze

Bring a little taste of autumn to your kitchen with these Perfect Pumpkin Scones! Made with pumpkin, warm spices, creamy ricotta, and a Utopihen Pasture-Raised Egg, these tender scones are full of cozy fall flavor. Top them with an easy maple glaze and a sprinkle of walnuts, then serve with a dollop of whipped cream and your favorite cup of tea or coffee.

Ingredients

Scones:

  • 2 1/2 cups all purpose flour
  • 3 Tablespoon sugar
  • 1 Tablespoon baking powder
  • 1 Tablespoon cinnamon
  • 1/2 teaspoon pumpkin spice
  • 1/4 teaspoon salt
  • 6 Tablespoon butter, cold and cut into pieces
  • 1 Large Utopihen Pasture Raised Egg, lightly beaten
  • 1/2 cup whole milk ricotta cheese, room temperature
  • 1/2 cup pumpkin puree*, room temperature
  • 1/4 cup whole milk

Maple Glaze:

  • 3 Tablespoons unsalted butter
  • 1/3 cup real maple syrup**
  • 1 1/2 cup powdered sugar
  • 1/4 teaspoon salt

Optional:

  • 1 cup Heavy Whipping Cream

Preparation

  1. Preheat oven to 350º F
  2. Line baking sheet with parchment paper.
  3. Add dry ingredients to bowl of food processor. Add in the butter and process until crumbly texture is formed.
  4. Pour butter mixture into large bowl. Set aside.
  5. In medium bowl mix egg, ricotta, pumpkin and milk.
  6. Stir until combined completely.
  7. Add egg mixture to dry mixture.
  8. Using a fork, stir until moistened.
  9. Turn dough out onto lightly floured surface.
  10. Gently knead the dough, gently pressing it for 10 to 12 strokes or until dough is nearly smooth.
  11. Pat dough into a square, cut out circles with a biscuit cutter, about 3 inches in diameter, making eight scones. You can re-knead the dough and pat out to make more scones until all dough is used up.
  12. Put on parchment lined baking sheet and bake 15 minutes.
  13. Let cool.

Glaze:

  1. Add all ingredients to a small saucepan and whisk until butter is melted and glaze forms.
  2. Remove from heat, let cool slightly.
  3. Spoon glaze on top of scones and garnish with a walnut.
  4. Best served with a dollop of whipped cream.

Notes:

*Use canned pumpkin. Just make sure the only ingredient is pumpkin.

**Make sure to use real maple syrup or it will not taste as it should.
