- 2 cups organic raw cane sugar
- 2 Utopihen Farms duck eggs
- 1/2 cup organic coconut oil, melted
- 2 tsp organic vanilla extract
- 2 3/4 cup all purpose flour
- 2 tsp baking soda
- 2 tsp cinnamon
- 2 tsp pumpkin pie spice
- 1 cup chocolate chips
Preparation
- Preheat your oven to 350°F. Line two 9×5-inch loaf pans with parchment paper and set aside.
- In a large mixing bowl, combine the canned pumpkin, sugar, Utopihen Pasture Raised Duck Eggs, melted coconut oil, orange juice, and vanilla. Mix until smooth and well combined.
- Add the flour, baking soda, cinnamon, and pumpkin pie spice to the wet ingredients. Stir until just combined, being careful not to overmix.
- Gently fold in the chocolate chips until evenly distributed throughout the batter.
- Divide the batter evenly between the two prepared loaf pans. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the loaves to cool in their pans for 10–15 minutes before transferring to a wire rack to cool completely. Slice and enjoy!
