Ingredients

  • Yukon Gold Potatoes (3 pounds, cut into 1-inch pieces)
  • Large Eggs (6)
  • Mayonnaise (3/4 cup)
  • Spicy Brown Mustard (2 tablespoons)
  • Dijon Mustard (1 tablespoon)
  • Apple Cider Vinegar (1 tablespoon)
  • Cornichons (2 tablespoons, finely chopped + 1 teaspoon of the cornichon brine)
  • Capers (1 tablespoon, drained)
  • Kosher Salt (1 teaspoon)
  • Black Pepper (1/2 teaspoon)
  • Paprika (1/2 teaspoon, plus more for garnish)
  • Fresh Dill (3 tablespoons, chopped)
  • Fresh Chives (3 tablespoons, sliced)
  • Celery (2 stalks, finely diced)
  • Red Onion (1/4 cup, finely diced)

Preparation

To Cook the Potatoes

  1. Place the potatoes in a large pot and cover with cold, well-salted water. Bring to a boil, then reduce to a gentle simmer and cook until the potatoes are fork tender, about 12 – 15 minutes. Drain well and let cool slightly.

To Cook & Prep the Eggs

  1. Place the eggs in a saucepan and cover with cold water. Bring to a boil, then remove from the heat, cover, and let stand for 10 – 12 minutes. Transfer the eggs to an ice bath until completely cool.
  2. Peel the eggs. Separate the yolks from the whites. Finely chop the egg whites and set aside.
  3. In a small bowl, mash the egg yolks with the mayonnaise, yellow mustard, Dijon mustard, apple cider vinegar, cornichon, cornichon brine, capers, kosher salt, black pepper, and paprika until smooth and creamy.

To Make the Deviled Egg Potato Salad

  1. In a large mixing bowl, combine the warm potatoes with the chopped egg whites, celery, red onion, fresh dill, and fresh chives. Gently fold in the deviled egg mixture until everything is evenly coated.
  2. Cover and refrigerate for at least 1 hour to allow the flavors to meld.
  3. Before serving, garnish with additional fresh dill, sliced chives, and a light sprinkle of paprika.

  1. Yukon Gold potatoes hold their shape beautifully while remaining buttery and creamy.
  2. This potato salad can be made up to one day in advance and tastes even better after chilling overnight.
