One Bowl Chocolate Cake

Ingredients

Cake:

  • 2 1/2 cups all purpose flour
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1/2 cup cocoa powder
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon espresso powder
  • 1/2 teaspoon salt
  • 1 1/2 cup buttermilk, room temperature
  • 2 large eggs, room temperature
  • 12 Tablespoons butter, melted
  • 2 teaspoon vanilla extract

Chocolate Buttercream:

  • 2 1/4 cup powdered sugar
  • 1/4 cup cocoa powder
  • 8 oz cream cheese – room temperature
  • 10 Tablespoons unsalted butter – room temperature
  • 10 oz semisweet chocolate – melted and cooled
  • 1/2 cup heavy cream – room temperature
  • 1/2 teaspoon salt

Preparation

Cake:

  1. Preheat oven to 330º F. Grease and flour one 9×13 inch pan and line bottom with parchment.
  2. To a large bowl add the cocoa, flour, sugars, baking soda, baking powder, espresso powder and salt. Whisk until combined.
  3. Whisk in the remaining ingredients and mix until smooth and everything is combined.
  4. Pour batter into pan. Bake 35-40 minutes or until toothpick inserted in the center comes out clean. Cool completely.

Buttercream Icing:

  1. In medium bowl add the powdered sugar, cocoa and salt. Whisk to combine. Set aside.
  2. In bowl of mixer, beat the cream cheese and butter until completely combine and smooth. With mixer on low speed, gradually add in the cocoa mixture, mix until completely combined.
  3. With mixer on low/medium pour melted chocolate in a steady stream into mixture and mix until completely combined.
  4. Add in the heavy cream, mix until completely combined and smooth.

Assembly:

Once cake is cooled and buttercream is prepared, spread with buttercream and sprinkles (optional).
