Gingerbread
Bring a little warmth to the table with this classic Utopihen Gingerbread! Made with rich molasses, orange marmalade, and plenty of cozy spices, this tender loaf is finished with a sweet orange glaze and homemade whipped cream. It’s a delicious treat for a chilly morning, afternoon coffee, or sharing with family and friends.

Ingredients
Gingerbread:
- 2 cups all purpose flour
- 1/2 cup whole wheat flour
- 1 Tablespoon ground ginger
- 1/2 Tablespoon cinnamon
- 1 teaspoon nutmeg
- 1/2 teaspoon cloves
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 12 Tablespoons unsalted butter – room temperature
- 1 1/2 cups dark brown sugar
- 1 duck egg – room temperature and whisked
- 1/4 cup molasses
- 1/4 orange marmalade
- 1 Tablespoon vanilla
- 1 cup water
Glaze:
- 2 Tablespoons orange marmalade
- 2 Tablespoons hot water
Whipped Cream:
- 1 cup heavy whipping cream
- 1 Tablespoon sugar
Preparation
Preheat oven to 345° F (320° F for dark or nonstick pans)
Line a loaf pan with parchment and set aside.
Dry ingredients:
- Add flours, spices, salt, baking powder, baking powder to a large bowl.
- Whisk together and set aside.
Wet ingredients:
- In large bowl add the butter and with the paddle attachment beat until creamed.
- Add the brown sugar to the butter and mix until well combined.
- Add in your egg and continue beating to combine.
- Add in your molasses, marmalade and vanilla, beat until well combined.
- Next alternate between adding the flour and water while you continue to beat on medium speed. Make sure you end with the flour.
- Beat until just combined and scrape down the sides of the bowl as needed.
- Pour into prepared pan.
- Place filled loaf pan on cookie sheet and place in the oven.
- Bake 60 minutes or until center bounces back when pressed on.
- Once done remove from the oven and let cool.
- Glaze with the marmalade mixture and serve with whipped cream.
Glaze instructions:
Mix the marmalade and water together until combined.
Whipped Cream instructions:
Whisk the whipped cream and sugar together until fluffy peaks form.
